Gas information sheet 18: Connection of commercial catering equipment
This information sheet provides information and guidance for those involved with the installation and connection of commercial catering equipment.
Commercial catering equipment installation must be to the requirements of AS/NZS 5601.1:2013 Gas installations and new appliances must be certified to AS 4563-2004 Commercial catering gas equipment.
Hose assemblies are permitted to be used to connect gas to an appliance but must be used as a complete assembly and shall be suitable for the application. Hose assemblies for use with cooking appliances shall be certified as conforming to AS/NZS 1869: 2012 Hose and hose assemblies for liquefied petroleum gases (LP Gas), natural gas and town gas and be Class B or Class D (refer to AS 4563-2004, clause 2.6.10 Gas hose assembly).
Keep hose assemblies as short as possible. Their diameter should be large enough to cater for the maximum gas consumption of the appliance.
A hose assembly must not be used as a restraint for an appliance. An appliance fitted with wheels and a hose assembly must have means to prevent stress on the hose due to appliance movement.
Connection point location
Hose assembly connection points shall be installed at least 1 m away from a doorway and located so as to avoid traffic across the hose.
Length and arrangement
There are no specific restrictions on length but the hose assembly should be long enough to allow access for disconnection or cleaning, and short enough to prevent the hose touching the floor, becoming damaged or hazardous. The hose assembly shall not exceed 3 m in length.
Strain on the hose assembly and its connections must be avoided. The preferred method of installation is for the hose to hang freely in a ‘U’ shape. The minimum recommended hanging radius is 12 x hose ID (internal diameter).
Hose assemblies should not be installed where they will be exposed to temperatures greater than the maximum temperature as specified by the manufacturer. They should be installed such that they are not subject to strain, abrasion, kinking or permanent deformation or damage by vermin.
Prohibited installation methods
Hose assemblies must only connect the appliance directly to the gas connection.
Hose assemblies shall not pass through a wall, a portable partition, the ceiling or the floor or from one room to another through a doorway with a closable door. They shall not pass through a fixed partition, unless the hole is made large enough to allow the hose and its attachments to pass through without damage, or through the panel or casing of the appliance, unless the appliance has provision to avoid damage to the hose.
Mobile or portable appliance connection
There are three connection methods allowable depending on hose assembly setups.
Permanent connection and union joint
Where the hose assembly is permanently connected to the appliance a manual shut-off valve and union shall be provided at the inlet end of the hose assembly.
Permanent connection and quick-connect device
Where the hose assembly is permanently connected to the appliance a quick-connect device shall be provided at the inlet end of the hose assembly. Here the user is able to disconnect the appliance for cleaning purposes.
Quick-connect device and manual shut-off
Where the hose assembly is connected with a quick connect device at the appliance, a manual shut-off valve shall be provided at the inlet end of the hose assembly.
Connecting appliances not designed to be moved
Always read the manufacturer’s installation instructions to determine the recommended method of connection. As a general rule, appliances which are not designed to be moved should be connected by rigid pipe or limited flexibility connection (semi rigid pipe).
Limited flexibility connections may be used for the final connection only in accordance with the manufacturer’s instructions and provided the appliance is also fixed to prevent movement.
Limited flexibility connections are not an alternative to a hose assembly and shall comply with AS 4631-2005 Limited flexibility connectors for gas and be certified.
Commercial catering equipment connected by hose assembly must be restrained to prevent stress being applied to the hose connections when the appliance is moved.
The accepted method of restraint is by chain or wire, anchored at one end, and fixed at the other end within 50 mm of the connection points in a way that will allow it to be detached.
The chain or wire must not exceed 80% of the length of the hose assembly.
Fitting wheels or castors
Fitting wheels or castors to appliances supplied without them should only be done with the agreement of the appliance manufacturer.
An appliance with wheels or castors must have a means of preventing movement of the appliance during operation, such as a wheel-locking system.
